I use clove oil in water. The fish falls asleep quickly and when left in for long enough the fish dies.

That should be ok as long as you stir up the gravel to dislodge any gas and sediment.

I don't think a couple of tiny dead assassin snails breaking down would cause such a bad smell (from my own experience. The problem may lay with fish waste etc being trapped under your substrate (gravel or sand) and this is breaking down and releasing sulphides as gas into the water. This gas is pretty smelly when it exits the water.
I would suggest using a siphon to clean the gravel and also stir the substrate around as best as possible to release any trapped gas.

I had the same problem. I tried small bits of lead sheeting but the plants stopped growing, very odd. I tried with small stones over the roots and now that the roots have grown, the roots kind of stick to the glass bottom of the tank and mess the gravel together.
