Use some old tank water in the container as all new water may be too much of a shock. Take some of the old tank water with you for setting it back up, too. You will need to take the tank down and set back up on the day of the move. The tank needs to be not running for as short a time as possible as the beneficial bacteria that cycle waste will die if out of water for long.
As to adding new snails - acclimate them as you would for fish. Which to pick is a personal choice, but if you are in the UK you won't be able to get apple snails as it is no longer legal to trade in them.
