You need to get the ammonia rising to 2-5ppm to cycle effectively (but pick a number 2, 3 4 or 5 and stick with it allthe way through) - either add a lot more food in a popsock to keep it tidy, or use liquid ammonia (from Homebase) which is much easier to dose accurately. Nitrites will rise as the bacteria break down the ammonia, but unless you dose to a decent level it will be imperceptible. Lese than 2ppm dosed daily won't give you enough bacteria to make the tank safe.

The cloudiness is, as you say, a bacterial bloom and will clear up on its own.
